Introducing Oloroso Sherry & Vermut Jelly
Bachelor Vista Jammery is excited to introduce a new addition to our wine‑driven lineup: Oloroso Sherry & Vermut Jelly.
This flavor has been in the works for a long time, and choosing the right sherry was the heart of the process. Fino, while beautifully dry, didn’t bring enough body to stand up in a jelly. Amontillado offered a lovely nutty character, but we wanted something deeper. Oloroso was the clear answer. Its warm, oxidative richness and full‑bodied structure give the jelly a natural depth that feels both savory and luxurious, the kind of flavor that lingers and invites another taste.
Of course, we had to consider the sweeter end of the sherry spectrum as well. Pedro Ximénez is a personal favorite for sipping, but its raisin‑rich sweetness would have tipped the jelly too far into dessert territory. Cream sherry posed the same challenge. We wanted balance, not syrup. By pairing Oloroso with a restrained amount of Spanish rojo classico vermut, known for its botanicals, spice, and gentle bitterness, we found the perfect combination. The vermut lifts the Oloroso’s darker notes, adding complexity without overwhelming the deep sherry flavor.
The result is a jelly that’s made for pairing: layered, aromatic, and a beautiful clear, golden hue. It shines with aged cheeses, charcuterie, roasted nuts, and even savory pastries. We can’t wait for you to taste what happens when Oloroso’s depth meets the botanical intrigue of vermut!
